Cantucci – Receip of Chiara’s mom:
250 grams of almonds – 500 grams of flour 00 -400 grams of sugar
half teaspoon baking powder powder -4 eggs -1 egg yolk -100 ml of Vin Santo – 50 g butter -1 pinch of salt
Preparation:
Toast the almonds in a preheated oven at 150 degrees for about 10 minutes and then let them cool down.
We knead very well flour, sugar, baking powder, salt and eggs, add the Vin Santo and melted butter warm and almonds.
We divide the dough and compose 4 cylinders about 3 cm wide and have them on a baking sheet with baking paper.
Coat the surface with beaten egg yolk and bake them at 180 ° for about 30 minutes. We cut our still hot cylinder obliquely forming our biscuits.
